Aurélie
Souchon Hardy opened her dream “healthy oasis” two years ago when space became available
at Waterfall Country Estate, the eco-friendly development between Sunninghill
and Midrand in Gauteng.
Aurélie has
subsequently relocated to Mauritius to enjoy family life, and sold the
business. The very competent manager, chefs and waiter staff remained on and with excellent team work take care of
the café with great skill.
The
kitchen is visible to customers behind the long counter and this provides a
buzz and homely atmosphere with friendly staff interaction.
The menu offers nutritious omelettes, wraps, and focaccias with delicious flavour combinations! Pesto, olives, olives, cherry tomatoes and rocket. Sweet and savoury flavours of roasted pear, caramelised onions, goat’s cheese, almonds and rocket. Other popular combinations are spinach, thyme and garlic mushrooms, sun-dried tomatoes, haloumi, avocado and poached egg. The Roma salad comprises rocket, grilled haloumi, sun-dried tomatoes, olives, baby marrows, marinated aubergines, roasted peppers and pine nuts.
An innovative Mexican Twist Burger consists
of a classic bean and lentil patty enhanced by cheddar, jalapenos, caramelised
onions and guacamole.
For those
who are firm believers in cleansing the body with a veggie juice cleanse made
from fruit and vegetables then this establishment is for you to get your detox
fix, especially with spring around the corner.
Bongani
Shongwe manages the restaurant on behalf of the owners who were regulars prior
to purchasing the establishment. They
became hooked with the high level of service, excellent food, health benefits
and the free Wi-Fi for business people on the move.
